A cool vegan imitation of Mexican standard. |
- 3 cups cooked black beans
- ½ cup chopped red onion
- 1 cup chopped fresh cilantro
- ½ cup chives chopped
- ½ cup scallion chopped
- 2 cups cooked chick peas
- 1 bunch fresh chard shredded
- 1 clove garlic
- 2 limes juiced
- 2 Patty Pan Squash
- ½ cup raw cashews
- 2 lemons
- 1TB of natural sweetener like raw agave nectar or raw honey
- 4 whole wheat tortillas
- Salt to taste

Toss black beans with ¼ cup chopped red onion, ¼ cup chives and ½ cup chopped cilantro. Mash coarsely with fork or potato masher. Add salt to taste.
