Black Bean KC Dilla with Chard Mock Guac & Squash

Directions | Toss black beans with ¼ cup chopped red onion, ¼ cup chives and ½ cup chopped cilantro. Mash coarsely with fork or potato masher. Add salt to taste.
Mock Guac Put chick peas, lime juice into a food processor with garlic and process with just enough water to a dip like texture. Add chard a little at a time until you have a bright green color. Add water in very small amounts if needed. Stir in remaining red onion and ¼ cup scallion. Salt to taste. Squash Crème Trim the stem from Patty pan and coarsely chop. Blend patty pan, cashews, sweetener and lemon juice together in a food processor until smooth with a sour cream texture.(add a touch of water if necessary. Salt to taste. To assemble KC Dilla Fill each tortilla with the bean mixture and the remaining chard. Spread ½ of the squash crème. Grill on both side until golden brown. Serve with topped with Mock Guac, remaining squash crème and scallion. |
