Curried brown rice with broccoli raab
Here is an eastern influenced dish using italian broccoli raab (aka rapini) |
- 1 tbs. olive oil
- 1 medium diced onion
- 1 red bell pepper, diced
- 1 stalk of celery, chopped
- 1 tbs. curry powder (more to taste if needed)
- 2 1/4 cups vegetable stock
- 1/4 cup coconut milk
- 1 cup brown rice
- 1 lb. broccoli raab, chopped
- 1 medium tomato chopped
- salt and pepper

sautee diced onion in olive oil until golden. Stir in bell pepper, celery, curry powder and ground black pepper. Add 1 3/4 cups of stock and coconut milk. Stir in washed brown rice. Bring to a boil, stirring. Cover and cook until soft (40-45 minutes). Meanwhile, heat additional stock, add broccoli raab, and tomato. Simmer until greens are tender. Serve on the rice. |
