Gardeners Ratatouille

DescriptionThis is a great main course, or it can be served as a side dish to your favorite meal.
Ingredients
  • 2 tsp olive oil
  • 1 cup chopped white onion
  • 1 cup chopped plum tomato
  • 2 cups chopped peeled Italian eggplant
  • 1 1/2 cups chopped zucchini
  • 1 cup chopped bell pepper
  • 1 minced garlic clove
  • 1 tbs each chopped fresh oregano, basil and parsley
  • salt and pepper to taste
DirectionsSaute onion in oil until tender. Add tomato, eggplant, zucchini, bell pepper and garlic. Cover reduce heat and simmer 30 minutes, occasionally giving a stir. Stir in remaining ingredients, cooking uncovered until all liquid evaporates.
