Gardeners Ratatouille
This is a great main course, or it can be served as a side dish to your favorite meal. |
- 2 tsp olive oil
- 1 cup chopped white onion
- 1 cup chopped plum tomato
- 2 cups chopped peeled Italian eggplant
- 1 1/2 cups chopped zucchini
- 1 cup chopped bell pepper
- 1 minced garlic clove
- 1 tbs each chopped fresh oregano, basil and parsley
- salt and pepper to taste

Saute onion in oil until tender. Add tomato, eggplant, zucchini, bell pepper and garlic. Cover reduce heat and simmer 30 minutes, occasionally giving a stir. Stir in remaining ingredients, cooking uncovered until all liquid evaporates. |
