Gnocchi with Brown Butter and Sage

DescriptionGnocchi is a pasta made with potatoes. You can sauce it with any traditional pasta sauce, although the brown butter with sage is exceptional.
Ingredients
  • Gnocchi:
  • 2 cups all purpose flour
  • 2 lbs Yukon Gold potatoes
  • 2 tbs salt
  • 2 large eggs
  • 1/4 tsp fresh ground pepper
  • Sauce:
  • 1 stick of butter
  • 1 oz fresh sage leaves
  • salt and pepper to taste
DirectionsPasta:Lightly boil potatoes, skins on in salted water for 25 minutes. Drain and peel. Pass the potatoes through a ricer or food mill, into a medium bowl. Add flour, eggs, 1 tbs salt and pepper, combine well and stir with a fork. On a lightly floured surface, knead dough for about 3 minutes until it is soft. Divide dough into 4 pieces, and roll each piece into a 3/4 inch thick rope. Cut ropes into 1 inch pieces. Press gently and flick off the tines of a fork to create ridges that hold on to a sauce. Boil gently for 6-8 minutes.
Sauce:Melt the butter in a saute pan and add the sage. Proceed to heat butter on a low temperature until it turns a nutty brown. Salt and pepper to taste, and toss with gnocchi in a serving bowl.
