Golden purslane and scrambled eggs

Directions | Trim the purslane plants to clean them up but otherwise leave flowers stems and leaves intact. Cut the plants into mouthsize pieces (I use kitchen shears).
Melt butter in saute pan over medium heat and add purslane. Saute for a few minutes then add eggs. Stir, then add your favorite cheese. Add pepper to taste. If you omit the cheese make sure you add salt to taste as well. If you're good at making omelets, use your own technique, I just kind of stir everything together until it sets and then serve it up. |
