Crustless Zucchini Quiche

DescriptionThis no fail recipe is perfect each time. It freezes great. A wonderful way to use up extra zucchini.
Ingredients
  • 3C. grated zucchini
  • 1C. Bisquick
  • 1/2C. finely chopped onion
  • 1/2C. grated cheese (parm, ramano, doesn't matter)
  • 2T. dried parsley flakes (works better than fresh)
  • 1/2t. salt
  • 1/2t. pepper
  • Big pinch of dried oregano
  • dash of garlic powder
  • 4 eggs
  • 1/4C. vegetable oil
  • 1C. shredded chedder cheese
DirectionsBeat eggs. Add everything else and mix. Grease and sprinkle corn meal into a 9" pie pan. Pour in mixture and bake for 45-50 min at 350 degrees.
Freeze after baking. Defrosts well in refrigerator and heats up in microwave.
